Seems to cost around 20 Euros an hour for the smallest boat (prices may have gone up since 2012).

An article in the FT about hiring a boat from this company.

Il Nuovo Trionfo

Apparently this restored sailing boat is available to charter for the day - although there is no mention of this on their website. From TimeOut Venice "If you fancy messing about on the water without expending energy, contact Alfredo Zambon to experience life on board the Nuovo Trionfo, a traditional trabacolo built in 1926. The boat - a two-masted, 30-metre (98-foot) vessel once common on the Adriatic but now the only one of its kind left - has been beautifully restored by an association that aims to preserve and promote the traditional wooden boats of Venice. Year-round, and from April to October in particular, an extensive range of activities is offered in the lagoon for up to 30 people: from a cruise or a sailing excursion, to special events, dinners or tours of the main islands of the lagoon. A half-day tour on the trabacolo will set you back around €800, while the full-day experience costs €1,300.".
